“In the l960’s, we used to go to the Mississippi River and find river shrimp there. River shrimp used to be a delicacy. They were seasonal and widespread then. They were like the filet mignon of the shrimp, but now they are gone. The last one I saw had a tumor on it, and third of the size of the shrimp, I saw it with my own eyes. This is the same time the industrial corridor was being developed from here to Baton Rouge. Things were changing radically, but people weren’t making the connections yet.”
